The nutritional properties of vegetables into a recipe full of taste.

300 grams potatoes
150 grams aubergines
150 grams tomatoes
150 grams peppers
150 grams courgettes / squash blossoms
100 grams chopped onion
1/2 dl olive oil
Salt and Pepper To Taste.

Peel potatoes. Wash and cut the potatoes, aubergines, courgettes and peppers. Put potatoes and aubergines in salted water in order to lose some of their bitter taste. In a saucepan, heat the olive oil and cook the chopped onion. When this mixture takes on a golden color, add aubergines, peppers and cougettes. At this point add the tomatoes and potatoes. Season with salt and pepper. Mix well and cook over medium heat. You can add white wine to complete the cooking. Serve at room temperature.
