Lagane and beans
A simple and ancient flavoured dish

400 gr. wheat flour
350 gr. fresh beans
4 tablespoons extra virgin olive oil
2 cloves garlic
1 red hot pepper
salt to taste

Work the pasta of wheat flour and roll it out with rolling pin. Rewind the pasta – lagana – on itself and cut with the knife in a uniform manner to create noodles and leave on a wooden base to dry. The original recipe provides for cooking beans with dressing and spices in a clay pot over an open fire. Alternatively boil in a pot beans seasoned with a piece of garlic, onion, lard or olive oil. You can add laurel leaves to give fragrance. Cook the pasta in the pot and then serve it at the table with plenty of boiling water. According to your taste, add a bit of hot pepper.
